I know this isn't raw (and I have been moving in that direction because it is the healthiest food), but I made up this recipe last night as a sort of comfort food. It would be really great to have once in a while. And it's absolutely delicious! Here's the recipe:
In a large bowl mix:
1 1/2 cups cornmeal1 1/2 cups whole wheat flour
3 Tablespoons brown sugar
1 teaspoon sea salt
2 1/2 cups water (or coconut milk if you have it)
1/4 cup olive oil (or vegetable oil)
1 cup unsweetened, shredded coconut
1 teaspoon baking soda
1 Tablespoon apple cider vinegar
1. Preheat the oven to 400.
2. Pour into a cast iron pan (it will seem very liquidy).
3. bake for 30 minutes or so.
That's it! Let it cool a bit and eat it with an awesome raw soup like Spinach-Avocado!

Have done cornbread before, but not with coconut...did i say how yummy it was???:)
