Mix all the wet ingredients in a blender until smooth and pour into the mix of dry ingredients. Stir together and pour into two greased cake pans. Preheat oven to 350 and bake for 25 minutes or until a scewer comes out dry when you poke it.
Cake:
3 cups flour2 Tablespoons custard powder
1 teaspoon baking powder
1 teaspoon baking soda
1 cup raw sugar
1 teaspoon sea salt
4 Tablespoons poppy seeds
6 Tablespoons fresh lemon juice
1 Tablespoon lemon zest
1 Tablespoon vanilla extract
2 cup water
1 avocado (peeled and pitted)
1/2 cup coconut oil or vegan margarine
1 Tablespoon apple cider vinegar
Icing:
4 cup icing sugar1/2 cup vegan margarine
3/4 teaspoon sea salt
2 teaspoon vanilla extract
1 Tablespoon lemon zest
2 Tablespoons fresh lemon juice
(in a food processor until smooth)
Top it with fresh blueberries or raspberries! You will love it!
